Bring to boil honey with Irish moss and yeast nutrient. 7-7 1.040 = 18.5 % potential Pitched (2) dry mead yeast smack packs @ 70F. 7-13 racked 1.092 = 12% sugar, added 2 1/2 tsp yeast nutrient Splashed down the middle when racking and swirled around too. 7-29, 5 second bubble. 4-8-2008 bottled 1.070 = 9% residual sugar 9.5% alcohol
