24 lbs honey
20 lbs lemons = 20 cups juice (1 gallon and 4 oz.) Irish moss and yeast nutrient - 15 minutes slow boil while I spoke to Tristan, Greg, and Scott on the phone. Tristan will come over for lunch next Friday. Saw Jessica and mom & dad from Nancy - her photos from Mexico were great. Oaxaca and lunch at Masala - GOOD. I added the 20 cups juice while I spoke to Snooz & Ross on the phone. Just got my tattoo stamp (above) I like it. We tasted # 19 tonight and I decided more lemon - we'll see # 19 is great as is. Nancy is knitting socks for Suzanne, mine are done. I'm driving tugger again, 2 ½ years from the EEO. 1/22 pitched yeast this AM at 66F put on grow mat for heat. Neil Harrigan came by for ironwork estimate,...I told Scott on the phone I'd witness or testify for the annulment if necessary. 1.141 = 18.2% potential. Nancy zest lemons for the dehydrator too, it smells great! 2/4 Racked out to 6 gallon carboy 76F with grow mat, really bright lemon taste! 1.082 - 10½. . 3/19 Racked, still up at 10% pitched Au De vie yeast and energizer, brought upstairs to heated floor to correct temp to 74F (soon I hope). 3/28 racked 7 times - 4/15 still nothing. 8/31 back downstairs, put in some yeast from blueberry #37 as well as the yeast starter I made with corn sugar from cyser #'s 33, 34, 35. 9/26 1.040 = 5.2%. Sheesh, I added the I. P. yeast sediment and some of the blueberry sediment too. I tried the yeast starter, I pitched new yeast - this batch is Charlie's batch and it's needs are special needs! At 1.040 = 5.2% and still barely fermenting with few bubbles. Let's hope it will still come around and be beautiful. 3/4/07 bottled 1.023 = 2.5 sugar. . .15.7% alcohol It is beautiful.
